Brussel Sprout Chips

The thing I like about this recipe is how incredibly simple it is. It's the same basic idea as any of the veggie chips we've been doing, but uses brussel sprouts to gives them a different flavor and texture, and how handy… the little leaves are already chip size and shape! You can use the same basic recipe with chopped kale as well, and you can season any of the veggie chips with your favorite herbs & seasonings, just make sure that they are sugar and starch free... 
Brussel Sprout Chips
Go to your new favorite section of the grocery store, the produce section and purchase a bag of brussel sprouts. You’ll need these, some olive oil and sea salt for the entire recipe.

1) Cut off the end of each sprout, removing the heel that is holding the leaves together. Remove as many of the leaves as you can, cut the center piece in half.

2) Put all the leaves in a bowl and toss them with a small amount of olive oil and sea salt.

3) Place the sprout leaves one layer deep on a cookie sheet lined with either foil or parchment paper, and spread them out as much is possible.

4) Roast the chips for 15-20 minutes in a 400° oven.
